Ingredients
  

  • 1 lb ground beef Can use lean if preferred
  • 1 large onion, diced Adds sweetness
  • 2 cloves garlic, minced Adds savory flavor
  • 1 can (15 oz) diced tomatoes Adds body and tang
  • 1 can (15 oz) red kidney beans, drained and rinsed Provide creamy texture
  • 1 can (15 oz) black beans, drained and rinsed Adds earthy flavor
  • 1 can (6 oz) tomato paste Thickens chili
  • 2 tablespoons chili powder Key flavor
  • 1 teaspoon cumin Adds smoky flavor
  • ½ teaspoon smoked paprika For smokiness
  • ½ teaspoon cayenne pepper Optional for spice
  • Salt and pepper To taste
  • 2 cups beef broth Flavorful base
  • Olive oil For sautéing

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook for 3-4 minutes until soft.
  • Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add ground beef, breaking it up. Cook for 5-7 minutes until browned. Drain excess fat.
  • Add chili powder, cumin, smoked paprika, and cayenne pepper. Stir to coat and cook for 1-2 minutes.
  • Stir in the tomato paste and cook for another 2-3 minutes.
  • Add diced tomatoes, beef broth, salt and pepper. Stir and bring to a simmer. Lower heat and cook for 20-25 minutes.
  • Add kidney beans and black beans, stir and simmer for another 10-15 minutes.
  • Taste and adjust seasoning if needed. Serve in bowls with toppings.

Notes

Chili can be made milder with spices on the side. Leftovers freeze well.
