Ingredients
  

  • 3 lbs Chuck Roast Cut into 1-inch cubes or coarsely ground.
  • ¼ cup Chili Powder (Authentic Texas Style)
  • 3–5 Dried Ancho Chiles Rehydrate and puree for flavor.
  • 2–3 Dried Guajillo Chiles Optional for depth and heat.
  • 1 Large White Onion Diced.
  • 4–6 Cloves Garlic Minced or pressed.
  • 2 tablespoon Ground Cumin
  • 1 tablespoon Dried Oregano Mexican oregano preferred.
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Cayenne Pepper Adjust to taste.
  • 1 Can (12 oz) Diced Tomatoes Optional.
  • 4 cups Beef Broth Low-sodium preferred.
  • 1 cup Strong Brewed Coffee Optional for depth.
  • Salt and Black Pepper To taste.
  • Vegetable Oil or Beef Tallow For browning.

Instructions
 

Rehydrate and Puree the Dried Chiles

  • Prepare the chiles by removing stems and seeds.
  • Rehydrate the chiles in water over medium heat for 15-20 minutes.
  • Puree softened chiles with soaking liquid until smooth and strain.

Brown the Beef

  • Cut the chuck roast into cubes and pat dry.
  • Sear beef in hot oil or tallow until browned.

Sauté Aromatics and Spices

  • Sauté diced onion until softened, then add garlic and spices.

Combine Ingredients and Simmer

  • Add chile puree and diced tomatoes; stir well.
  • Return beef, add broth and coffee; bring to a simmer.
  • Simmer for 2-3 hours, stirring occasionally.

Season and Adjust

  • Taste and season with salt and pepper; adjust heat as desired.
  • Optional: Continue simmering for additional flavor development.

Serve and Enjoy

  • Allow the chili to rest before serving.
  • Serve hot with toppings of choice.

Notes

For a more traditional chili, omit the tomatoes and adjust spices according to your taste.
