  • 2 cups cottage cheese Use full-fat for best texture.
  • 3 large eggs
  • 1 large apple, peeled and finely diced
  • 0.5 cup rolled oats or almond flour
  • 0.25 cup maple syrup or honey
  • 1.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Baking Instructions

  • Whisk cottage cheese, eggs, maple syrup, and vanilla in a bowl.
  • Stir in oats (or almond flour), cinnamon, and baking powder.
  • Fold in diced apples.
