Beef and Vegetables

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups apple cider
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Seasoning and Oil

  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

Cooking Steps

  • Prep the Ingredients: Cut the beef into cubes, chop the vegetables, and mince the garlic.
  • Brown the Beef: In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes, seasoning with salt and pepper. Brown on all sides, about 5-7 minutes.
  • Sauté the Aromatics: Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes translucent.
  • Add Tomato Paste: Stir in the tomato paste, cooking for an additional minute to enhance the flavors.
  • Pour in the Cider: Add the apple cider, scraping any brown bits from the bottom of the pot to incorporate all the flavors.
  • Add Vegetables and Herbs: Toss in the carrots, potatoes, thyme, rosemary, and bay leaf. Stir well to combine.
  • Bring to a Simmer: Allow the stew to come to a gentle boil, then reduce the heat to low.
  • Cover and Cook: Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld beautifully.
  • Thicken the Stew (Optional): If you prefer a thicker stew, mix the cornstarch with a little cold water to form a slurry. Stir it into the stew during the last 10 minutes of cooking.
  • Season to Taste: Before serving, taste the stew and adjust the seasoning with more salt and pepper if needed.
  • Garnish and Serve: Remove the bay leaf and serve the stew hot, garnished with fresh parsley.
