Ingredients
  

  • 1.25 cups mashed very ripe bananas measure after mashing
  • 2.5 cups quick oats do not use rolled oats
  • 2 tablespoon maple syrup or more to taste
  • 1.25 cups fresh blueberries

Instructions
 

  • Preheat oven to 350°F (177°C). Line an 8 inch by 8 inch baking pan with parchment paper.
  • In a large mixing bowl, combine mashed bananas, quick oats, and maple syrup. Mix until combined.
  • Divide the oat mixture in half and press one half evenly into the baking pan.
  • Blend blueberries until pureed. Pour blueberry puree over the oat mixture in the pan.
  • Spread the remaining half of the oat mixture on parchment paper to match pan size, then place on top of blueberry puree.
  • Bake for about 30 minutes or until golden brown. Let cool before cutting into bars.

Notes

Sweeten to taste with more maple syrup. Ensure bananas are finely mashed. Use a small blender for blueberry puree for best results.
